Fun fact - did you know it is National Pie Day today?  This is not to be confused with Pi day, that’s a whole different equation. National Pie Day was created for the sole reason of celebrating all things pie related.  You may enjoy eating pie, but do you know the history of pie? 

Pies have been around for ages. The first pies came about around 9500 BC by the Egyptians. The Romans published a pie made from rye-crusted goat cheese and honey. Aren’t you so glad we evolved to cherry, apple and other more appetizing flavors?

The first English settlers brought  pies to America and now it is considered the most traditional American dessert.

Some more fun PIE facts you can impress your friends with:

  • Pumpkin Pie wasn’t served at the pilgrim’s first Thanksgiving in 1621
  • Originally, fruit pies were a breakfast food in the United States
  • 20% of Americans have admitted to eating a whole pie by themselves
  • 186 million pies are sold just in supermarkets and grocery stores alone each year
  • In Kansas, it used to be illegal to serve ice cream on cherry pie
  • “American Pie” was the name of the plane Buddy Holly died on
  • Key Lime Pie is the official pie of Florida
  • Peach Custard Pie is the official pie of Delaware
  • Pumpkin Pie is the official pie of Illinois

Raspberry Cream Cheese Pie 

This Copycat Kneaders Raspberry Cream Cheese pie is sure to be a hit at your next family function. It is creamy, delicious, and surprisingly light.

Servings: 1 pie

Ingredients

Crust:

  • 1 c. flour
  • 1/2 tsp salt
  • 1/3 c. shortening
  • 2-3 TB cold water

Filling:

  • 16 oz cream cheese
  • 1 1/3 c. powdered sugar
  • 2 tsp vanilla
  • 2 c. whipped cream

Raspberry Coulis:

  • 12 oz raspberries
  • 1/4 tsp orange zest
  • 1/2 C sugar
  • 1/4 C lemon juice
  • 1/4 C water

Instructions

Crust:

  1. Mix flour and salt.
  2. Cut in shortening.
  3. Slowly add more water.
  4. Carefully knead.
  5. Roll out.
  6. Lay in a 8 or 9 inch pie tin.
  7. Bake at 400 for 8-10 minutes or until puffy.

Filling:

  1. In a large bowl, beat cream cheese, powdered sugar, and vanilla until light and fluffly.
  2. Fold in 2 c. whipped cream.
  3. Spread over crust and chill.
